Recipe:

Ingredients:

  • 1/2 cup Greek yogurt
  • 1 large raw egg
  • 1/2 the juice of one lemon
  • 1 teaspoon vanilla extract (optional)
  • 1/2 scoop PE Science Gourmet Vanilla Protein Powder (can be substituted for another Vanilla Protein Powder or with 16 g of flour)
  • 1/2 teaspoon baking powder
  • 1/2 cup fresh strawberries (halved)

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix together the Greek yogurt, egg, lemon juice, and vanilla extract in a bowl.
  3. Add in the vanilla protein powder and baking powder and mix.
  4. Line a small baking dish with parchment paper
  5. Pour the mixture into the dish and put it into the oven.
  6. Bake for 35-40 minutes or until done.
  7. White it cooks, mash the fresh strawberries.
  8. Let it cool for at least 10 minutes.
  9. Top with the mashed strawberries and enjoy!
